Why fit outs matter

By putting our sustainability hat on when we refurbish or build new spaces, we’ll create considered, sustainably minded restaurants designed to help us achieve our targets.

When we’re fitting out these spaces, we’ll take into account:

  1. The impact of the fit out itself; from the materials we use and how we manage our waste during the fit out, to transport and labour conditions.
  2. How the restaurant will operate once the fit out is complete; we’ll consider how efficient it will be in terms of energy and water use, whether the indoor environmental quality will meet our standards and how we’ll impact local biodiversity.
